Wet ingredients:
1/2 cup sourdough discard
1 cup kefir or buttermilk or clabber
2 eggs
2 tbsp grass-fed butter or pasture-raised lard
2 tbsp raw honey or maple syrup (optional)
Dry ingredients:
2 cups organic flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
For more protein reduce flour and add 1/4-1/2 cup almond flour
Method:
I think you all know how to do this, but here goes!
Mix wet ingredients in a bowl
Mix dry ingredients in a separate bowl
Add wet ingredients to dry and mix until just combined (thin with milk if necessary)
Drop 1/3 cup batter onto a preheated, greased cast iron skillet
Cook until bubbles start to pop on the surface
Flip and cook 10 seconds more
Remove to a warmer until all pancakes are ready to serve
