Sourdough-discard Pancakes

Wet ingredients:

  • 1/2 cup sourdough discard

  • 1 cup kefir or buttermilk or clabber

  • 2 eggs

  • 2 tbsp grass-fed butter or pasture-raised lard

  • 2 tbsp raw honey or maple syrup (optional)


Dry ingredients:

  • 2 cups organic flour

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt


For more protein reduce flour and add 1/4-1/2 cup almond flour


Method:


I think you all know how to do this, but here goes!


  • Mix wet ingredients in a bowl

  • Mix dry ingredients in a separate bowl

  • Add wet ingredients to dry and mix until just combined (thin with milk if necessary)

  • Drop 1/3 cup batter onto a preheated, greased cast iron skillet

  • Cook until bubbles start to pop on the surface

  • Flip and cook 10 seconds more

  • Remove to a warmer until all pancakes are ready to serve
