Sweet Sourdough Master Dough

MIX THE DOUGH
- Melt together: 
1.5 cups grass-fed milk
1/4-1/2 cup raw, organic sugar depending on how sweet you want the dough
3 Tbsp grass-fed butter
- Pour into mixing bowl and add 2 pasture-raised eggs (make sure the liquid isn't to0 hot, you don't want to scramble your eggs) 
- Add 1 cup of sourdough starter 
- Start adding flour 1 cup at a time (you'll need around 4 cups total, but it depends on how big your eggs are, how much sugar you used, and how thin your starter is) 
- When the dough is somewhat shaggy let it rest 10 minutes, then add 1 tsp salt 
- Add more flour as needed until the dough can be handled - it shouldn't be a sticky mess but it also shouldn't feel dense, it will be a soft dough - FIRST RISE
- Let the dough rise 1 hour - STRETCH AND FOLD 
- Stretch and fold the dough in thirds like a letter, turn 90 degrees and repeat - SECOND RISE 
- Let the dough rise anothe hour - GATHER 
- Gather the dough up by pulling it in on itself from the edges until it forms a ball 
- Flip the ball of dough over so the gathers are seam-side down 
- Rest 30 minutes to 1 hour - SHAPE 
- Shape the dough however you want - roll and cut for doughnuts, braid it for pastry, make cinnamon buns etc. 
- Rest 30 minutes or while oven or oil heat - BAKE OR FRY
