Our Piri Piri Chicken Sausage is full of flavorful pasture-raised chicken with just the right amount of heat. Cook it up patty-style and serve on a homemade bun with garden-fresh lettuce and cilantro garlic mayo for a fast, easy weeknight meal. Alternately serve as meatballs with cilantro garlic Mayo as a dipping sauce and a fresh green side salad.
Ingredients:
1 recipe no-rise burger buns (see below)
1 lb. Piri Piri chicken sausage
6-8 large lettuce leaves or mixed greens
1 recipe garlic-cilantro mayo (see below)
For the FAST no-rise buns:
15g active dry yeast (2 tbsp)
170g water (3/4 cup)
75g lard, avo oil, or melted butter (5 tbsp)
20g cane sugar (1.5 tbsp)
1 egg
1 tsp salt
360g all purpose flour (3 cups)
Instructions:
bloom yeast in warm water with sugar added
add dry ingredients, yeast mixture, oil, and egg
mix in stand mixer with dough hook until dough is elastic
divide into 6-8 pieces
let rest for 10 minutes, dont let rise
brush with egg wash
bake in oven preheated to 425 F til cooked through and tops are golden brown
For the garlic cilantro mayo:
8 tbsp mayonnaise (if you have eggs in your CSA subscription, you can easily make your own mayo! Just blend an egg with pinch of salt, a dollop of dijon mustard, and a splash of cider vinegar, then very slowly add 1 cup of avocado or olive oil until the mixture emulsifies!)
4 cloves garlic (minced)
4 tbsp chopped cilantro
salt to taste
Instructions:
crush everything in a mortar and pestle or blend in a food processor
For the chicken patties:
Divide 1lb of chicken sausage into 3-4 pieces, shape into balls then flatten into a patty shape
Fry for 3-5 minutes per side until evenly browned
To assemble:
bun + patty + garlic cilantro mayo + crisp leaf of lettuce + bun
Easy as that!
