Perfect Sausage Biscuits


For the biscuits:


  • 2 and 1/2 cups (313g) all-purpose flour

  • 2 Tablespoons aluminum free baking powder

  • 1 teaspoon salt

  • 1/2 cup (1 stick or 113g) unsalted butter very cold

  • 1 cup buttermilk or kefir


  1. Preheat oven to 425F

  2. Combine flour and salt in a bowl

  3. Cut the butter into cubes and work it through the flour with your hands or a pastry cutter until pea-sized

  4. Add buttermilk or kefir and combine into a shaggy dough

  5. Flour a cutting board and dump the dough into it, flatten and shape with your hands into a rough rectangle

  6. Fold the rectangle in half and roll with a rolling pin to make another rectangle

  7. Repeat the fold and roll 6 times, the dough will start to come together, if it gets too sticky add flour

  8. The folds are critical to have flaky layers in your biscuit

  9. After the sixth fold, roll out into a rectangle and cut 8 biscuits with a 2.5”-3” biscuit cutter, press straight down to cut and do not twist or you will seal the layers together!

  10. Arrange the biscuits on parchment paper on a baking sheet or place in a cast iron pan and bake for 18-20 minutes

  11. While the biscuits bake, fork sausage into Pattie's and cook until evenly browned

  12. To serve, split a biscuit and place a patty between the halves - if you're feeling extra add some eggs and cheese. 🤤
