
Ingredients:
1 pkg Mangalitsa Chorizo (removed from casings)
6 pasture-raised eggs
1 can black beans, drained
1 small onion, chopped
Salt
Pasture-raised lard or bacon fat
For assembly:
Fresh pico de gallo or salsa
Avocado
Tostadas or tortilla chips
Queso fresco
Sour cream
Directions:
Cook chorizo in a skillet over medium high heat, breaking into chunks until fully browned
Remove from skillet and set aside
Add extra lard/fat to the skillet if needed
Add onion and sautè until translucent
Add beans and cook 5 minutes
Season with salt and set aside
Wipe out the pan and add lard or fat over medium heat
Crack in eggs one at a time and fry until whites are cooked but yolks are still slightly runny
Place chips or tostada on plates, top with chorizo, beans, and an egg
Serve with pico de gallo/salsa, sliced avocado, sour cream, and queso fresco
