Ground Beef "Shawarma" Sandwich


Ingredients:


For the naan bread:

125g warm water

2.5 tsp active dry yeast

1 Tbsp sugar

400g all-purpose flour

1 tsp salt

1/2 tsp baking soda

1 tsp baking powder

125g Plain yogurt

30g olive oil


For the beef:

1-2lbs ground beef

1 Tbsp shawarma seasoning mix (if you don't have a favorite blend, this blog has a nice recipe)


For the tzatziki sauce:

1 cucumber

2 cloves garlic

1 bunch fresh dill

Greek yogurt

Salt to taste


Directions:

  1. First make the naan:

  2. Add yeast and sugar to warm water and allow 5-10 minutes to activate

  3. In a separate bowl mix together flour, baking soda, salt, and baking powder

  4. Add yogurt to the yeast mixture, then add the dry mix a little at a time until a cohesive dough forms

  5. Let the dough rise in a warm place for 1 hour

  6. Heat a cast iron skillet over medium heat

  7. Gently deflate the dough and cut into 8 equal pieces

  8. Roll each naan by holding one end of the dough with your fingers and rolling away from yourself to make a teardrop shape

  9. Cook each naan in the skillet for a couple of minutes per side until brown bubbles form on the surface

  10. Set naan aside and keep warm

  11. Brown beef in the skillet and add seasoning, let it remain warm on low heat while you whisk together the tzatziki

  12. To make the tzatziki sauce grate a cucumber and squeeze out the extra juices, add to 1 cup greek yogurt with 2 minced garlic cloves and 1 Tbsp minced, fresh dill, season with salt to taste

  13. Serve beef alongside warm naan with tzatziki sauce, gherkins, picked red onions, and any other toppings you like!
