TRADITIONAL FOODS ARE SUPERIOR IN MICRONUTRIENTS

Lacto-fermentation generates vitamin C, K, and B vitamins.  Fermentation makes the nutrients in the vegetables more bioavailable, especially iron and zinc.  Fermentation releases proteins, amino acids, and antioxidants.

Lard from pasture-raised animals is high in vitamin D, it is second only to cod liver oil.  It also contains high levels of choline, antioxidants, and omega-3 fatty acids.

Organ meats are a rich source of iron, protein, vitamin A, B-12, folate, and choline.

Most of the US population is deficient in important micronutrients

94.3% of the US population do not meet the daily requirement for vitamin D, 88.5% for vitamin E, 52.2% for magnesium, 44.1% for calcium, 43.0% for vitamin A, and 38.9% for vitamin C.

100% of the population had intakes lower than the AI for potassium, 91.7% for choline, and 66.9% for vitamin K.

The prevalence of inadequacies was low for all of the B vitamins and several minerals, including copper, iron, phosphorus, selenium, sodium, and zinc

HEY THERE!

I'm Heather.  Regenerative farmer, real food activist, vitalist herbalist, radical homemaker, and mother of 4. For over a decade I've been obsessed with unconventional eating and creating nutrient-dense meals for my family. I believe that diet is the root of health and a healthy digestive system = a healthy immune system and a reduced risk of chronic illness, allergies, and autoimmune disease.

 

It took me many years to layer in how to create different cultured and fermented vegetables and beverages, raw dairy and cheesemaking, sourdough and bone broth, pasture-raised meats and healthy fats, and gradually shift our diet towards optimal health and nutrition.  But as the pieces clicked into place I realized, none of it was complicated, or even overly time-consuming. 

 

Creating these foods doesn't have to be intimidating and you don't need a PhD in microbiology to do this stuff. Our ancestors did this for thousands of years and it was simple and second nature to them! I want to shout it from the rooftops and let everyone know that they too can do these things, ditch processed foods, and have radical shifts in their health and wellness.
